Hi Cocoonettes!


Today, we're serving up a recipe that's not only quick and easy but also incredibly delicious. Get ready to indulge in the comforting embrace of our Pancetta and Parmesan Mee Goreng! 🧀🥓


🍜 Ingredients:

- 2 x 85g packets of mee goreng instant noodles

- 1 egg plus one egg yolk

- 40g parmesan, finely grated, plus extra to serve

- 120g flat pancetta, cut into 1cm thick batons

- 1 tbsp extra virgin olive oil


Method:

  1. Place your instant noodles in a heatproof bowl, reserving the flavour sachets. Season with a pinch of salt flakes and pour enough boiling water to cover the noodles. Set them aside to soak and soften.

  2. In a separate small bowl, combine one whole egg, one egg yolk, finely grated parmesan, and the reserved noodle sauces. Discard the seasoning sachet and set the egg mixture aside.

  3. Now, let's crisp up that delicious pancetta! Place the pancetta and olive oil in a large, cold frypan over medium-high heat. Stir occasionally, and cook until the fat has rendered and the pancetta turns irresistibly crispy.

  4. Drain your softened noodles, but reserve 2-3 tablespoons of cooking water. Add the noodles to the pancetta, giving them a good toss to combine. Remove the pan from the heat, and now, it's time to introduce that luscious egg mixture. Toss everything together, adding just enough reserved cooking water to create a creamy, silky sauce that beautifully coats and emulsifies the dish.

  5. Plate your Pancetta and Parmesan Mee Goreng, and don't forget to scatter some extra parmesan on top. Finish with a generous crack of freshly ground black pepper for that perfect final touch.
