Today's Menu: Banana Bread!

Hi Cocoonettes!

You don’t want to waste your banana that has been on the counter for a week. Do you want an excellent little gourmet and comforting dessert? Then this recipe is for you!

For this first recipe, we have offered you the indelible Banana Bread.

It's the best banana bread I've had in years. Thank you! –Jane William

Ingredients :

  • ¼ cup all-purpose flour

  • ¼ teaspoon baking soda: Gives the bread its rise. Ensure it’s fresh for optimal results.

  • ¼ teaspoon ground cinnamon: Brings warmth and spice.

  • ⅛ teaspoon salt

  • one medium banana, mashed: The star! Overripe bananas are best as they are sweeter and mashed easily.

  • two tablespoons sugar

  • one tablespoon salted butter, melted (plus more for greasing the ramekin)

  • one large egg yolk

  • ½ teaspoon vanilla extract: Adds depth of flavour.

Instructions :

  1. Heat the oven to 350°F (177°C) and lightly grease a 10-ounce ramekin. Mix baking soda, flour, cinnamon, and salt in a small bowl. Set aside.

  2. Mash the banana with a fork and add to a medium-sized bowl. Add the sugar and whip the banana and sugar with an electric mixer or a wire whisk.

  3. Mix well with the melted butter, egg yolk, and vanilla.

  4. Add the dry ingredients and mix until combined.

  5. Pour into the ramekin and bake for 25-30 minutes until golden brown.

  6. Remove from the oven and cool slightly before eating.

Small tips: For more delicacy, add chocolate chips or peanut butter after cooking! Yummyyy
